Ingredients
- ¾ cup cornmeal
- 1¼ cups milk
- 1 cup whole wheat or all-purpose flour
- 1/3 cup sugar
- 1 tablespoon baking powder
- ½ teaspoon Spice Depot Spicy Sea Salt*
- 1 egg
- ¼ cup olive oil
- ¼ cup finely grated asiago cheese - optional
* May be substituted with Spice Depot Sea Salt or Spice Depot Seafood Seasoning, Spice Depot Salad Seasoning, Spice Depot BBQ Burger Seasoning, Spice Depot New York Steak Seasoning, or Spice Depot Smoky Rib Seasoning
Methodology
In a medium bowl, combine the milk, olive oil and egg. Add the cornmeal, stir and let rest for 10 minutes to soften cornmeal. Separately combine dry ingredients. Add dry ingredients to cornmeal mixture and stir just to combine.
Fill 12 oiled or papercup-lined muffin cups, or turn into 8" square oiled cake pan and bake at 400F in middle rack for 15-20 minutes or until toothpick inserted into centre comes out dry. If using cheese, remove muffin or cake pan 5 minutes before done, gently sprinkle cheese over top and return to oven for final five minutes.
