Ingredients
- 3 teaspoons dried organic oregano
- 1 teaspoon dried organic basil
- 1 teaspoon dried organic thyme
- 1 clove garlic, peeled and finely chopped
- 3/4 cup Tuscan or good quality olive oil
- ¼ cup balsamic vinegar or strong red wine vinegar
- 1 teaspoon ground Spice Depot Black Peppercorns
- ½ teaspoon Spice Depot Sea Salt
- zest of one-half lemon
Methodology
Combine all ingredients. Chill in the refrigerator.
Experiment with balsamic vinegars infused with fruits like figs, plums and blueberries. Adding a tablespoon of grainy mustard and a dash of Worcestershire sauce will markedly change the flavor of this dressing.
Use this recipe as a dressing for salads, a marinade for grilled vegetables, or a marinade for chicken. If using as a marinade, try substituting 50% lemon juice for the vinegar to lighten the acidity and add double the amount of lemon zest. The oils in the zest really penetrate the meat.
