Ingredients
- Olive oil and butter to equal ¼ cup (best not to omit butter entirely)
- 1 small onion, finely chopped (½ cup or so to taste)
- 3 cups low-sodium chicken or vegetable stock*
- 1 - ½ cups long grain white or brown rice
- 1 tablespoon chopped fresh or ½ tablespoon Dried Organic Parsley
- 1 teaspoon Spice Depot Salad Seasoning
- Few grinds Spice Depot Coarse Sea Salt
- Few grinds Spice Depot Black Peppercorns
- Handful of pecans, chopped for garnish - optional
Methodology
In large heavy saucepan, melt butter in oil taking care not to burn. Saute onion slightly until transparent. Add spices and rice and saute for a few minutes until rice is well coated. Stir in the chicken or vegetable stock and bring to a boil. Cover and reduce heat to simmer. Simmer until all liquid is absorbed: 20 minutes or so for white rice, and 25-45 minutes for brown, according to package instructions. Garnish with chopped pecans, if desired.
This rice is excellent served cold and makes a lovely picnic side dish.
*for vegetarian version, use vegetable stock instead of chicken stock.
