Ingredients
- 4 slices soft wholewheat or white bread (not too thick)
- 2 tablespoons butter or olive oil
- 1 tablespoon mayonnaise or similar spread
- 1 tablespoons yellow or specialty mustard
- 2-4 slices or sliced smoked chicken, turkey, ham or salami or, enough thinly shredded rotisserie chicken to lightly cover bread
- 2-4 slices favorite cheese (real cheese works best)
- 2 large eggs
- 1 tablespoon milk
- 1 teaspoon Spice Depot JoJo Potato Seasoning
- Few grinds Spice Depot Sea Salt
- Few grinds Spice Depot Black Peppercorns
Methodology
Build sandwiches and set aside. In a shallow rectangular pan (long enough to accommodate two pieces of bread side by side), beat egg, milk, salt and pepper and Spice Depot JoJo Potato Seasoning.
Place sandwiches, side by side in egg mixture and turn quickly but gently so contents don't spill out, until all of the egg is absorbed.
Spread olive oil evenly over the bottom of a large skillet and heat to medium high. Place sandwiches one at a time, or side by side in the skillet and cook until brown, turn and cook remaining side, taking care that all egg is cooked.
