Ingredients
- 1 head cauliflower, cut in florets, or
- 1 small bag baby carrots
- 2 tablespoon orange juice concentrate (or orange or lemon juice in a pinch)
- 2 tablespoon olive oil or a dollup of butter
- 2 teaspoons Spice Depot Salad Seasoning
- Few grinds Spice Depot Black Peppercorns
Methodology
In large pot of boiling water, cover and cook cauliflower or carrots until tender-crisp. Likely 10-15 minutes, depending on size of pieces.
Drain and set aside. In the same saucepan, melt the butter or warm the oil and then add the juice concentrate. Stir in the Spice Depot Salad Seasoning and Spice Depot Black Peppercorns. Return cooked vegetables to pot and toss. Serve immediately.
This dish is delicious served cold as well, but its best not to cook the vegetables too much. Larger carrots, sliced diagonally make for a nicer looking cold salad.
