Ingredients
- 2/3 cup olive oil
- 1/3 cup balsamic vinegar
- 1 onion, chopped very fine
- ½ cup vegetable broth (left-over white wine works too)
- 3 cloves garlic, minced
- 2-6oz cans solid white tuna packed in water, drained and cubed
- 1 can sliced black olives
- 1 8oz package of feta cheese, cut into cubes (or baby bocconcini pearls)
- 1 small package of grape tomatoes
- 1 teaspoon dried organic oregano
- 1 teaspoon dried organic basil
- ½ teaspoon Spice Depot Spicy Sea Salt
- Cooked bowtie pasta for 8
Methodology
Prepare pasta al dente while cooking pasta sauce.
In a deep skillet, sauté garlic and onion in oil until soft, add balsamic and herbs and spices and heat through then add broth. Add tuna and olives and cover to heat through. Reduce heat and add tomatoes and heat through again without excessive stirring to burst the tomatoes, keeping warm until pasta is cooked. Drain pasta and pour into large deep serving dish. Uncover skillet and add feta, stir quickly to heat and pour over hot pasta. Serve with sliced of sourdough brushed with olive oil and sprinkled with Spice Depot Garlic Pepper, then pushed under the broiler or set on the grill for a few seconds.
This dish is delicious hot but even more delicious cold. It is a buffet table favorite and travels very well in a picnic basket.
